WHere is an easy interpretation of a beverage featured on our latest menu. It's a batch pre-mixed that's bursting with flavours of a holiday season, rendering it excellent for hosting a celebration. Reserve the remaining cordial for brunch beverages, desserts, or to make another batch of bikinis.
Bikini Recipe
Yields 10 servings
To make the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Combine the listed components inside a saucepan, bring to a gentle boil, agitating to dissolve. Next, turn off the heat and leave to cool fully. Decant into a clean bottle, cap it keeping it chilled, where it will keep for about one month.
To make Premix: Pour every spirits and syrup in a sizeable container, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's completely strained.
When ready to serve: Pour 85ml from the batch mix to a stirring glass containing ice, and agitate carefully for a minute until cold. Filter into an frosted cocktail glass or similar, garnish with a few cranberries and finish by giving it a light spray of mandarin oil above the glass.
